A Special Lobster Dish for Dan

A special lobster dish for Dan.
Last week we had friends over for dinner, and I prepared lobster casseroles that Dan liked very much.  So I made a special meal for him last night.  Lobster again.  I'll include the recipe.  It's simple to make and delicious. Add a salad and dinner is ready.

 Lobster Casserole for Two

2 cups lobster meat, cut in chunks
2 tbs of butter
2 tbs of all-purpose flour
1 and 1/2  cups heavy cream or half and half
1/4 c of medium dry sherry
1/4 tsp paprika
1/4 tsp fresh ground nutmeg
Salt & fresh ground pepper

Divide the lobster meat into two shallow gratin dishes.

In a medium saucepan, melt the butter over medium-high heat.  Add flour and cook, whisking, until bubbly, about 1 minute.  Add the cream and the sherry, bring to a boil and whisk until the mixture is thick and bubbly.  Add paprika, nutmeg, and salt and pepper to taste.

Pour the sauce over the lobster.  Top with puff pastry. (I use frozen).  Preheat oven to 425 degrees.  Bake, uncovered, until the sauce is bubbly and the pastry is golden brown, about 10 to 15 minutes.

Place lobster in gratin dish.
Add flour to melted butter and whisk.
Add cream and sherry and cook until thickened.

Add seasonings.

Top with puff pastry and bake until pastry is golden brown.
Dinner is ready.
