Deviled Eggs for Cinco de Mayo

Deviled Eggs with a Mexican twist. 
I like deviled eggs, and I was inspired to make these today by Lisa Prince's recipe on WRAL. 
Ready to remove the yolks. 

I halved the eggs and put the yolks in a plastic bag so they could be mashed along with about a cup of guacamole, some Mayo, some sour cream and a bit of hot sauce.  I had never thought of mashing the yolks this way, but it works wonderfully.  Salt and pepper were added to taste.
Everything all smashed together.  Easy. 

Piping the mixture into the egg halves. 
After snipping a small hole in the corner of the plastic bag, it was easy to pipe the mixture into the egg halves. 
Ready for Cinco de Mayo. 
For some of the eggs, I added a dollop of salsa.  Salsa in the middle of the dish with chips and a bowl of chips on the side, and this is ready for tomorrow.

I couldn't wait to try the eggs so I added a few to my lunch today.  I have enough of the mixture to have Guacamole Eggs on toast for breakfast tomorrow.

Holiday Tournament Broughton vs. Apex 2014

Holiday Invitational Tournament

The Holiday Invitational Tournament is well underway here in Raleigh with Broughton High School the venue for the boys' tournament.  Broughton played Apex for the right to advance to the final championship game of the Summit Hospitality Bracket.   It was a close game, tip and tuck the whole way.  Here are a few of the photos captured by the photographer for WRAL.

In the end the Broughton Capitals won 63 to 62, but they will now face Millbrook a formidable opponent who has already beat them once this season.  This will be an exciting game. Good luck CAPS.

Coney Island Hot Dogs in Raleigh


I usually eat hot dogs just once a year at the State Fair, but after having my fill of turkey and all the trimmings over the Thanksgiving weekend I began hankering for a hot dog.  Our local TV Station WRAL had recently reviewed Five Best Places for Hot Dogs and one of the places, Cloos' Coney Island, had been featured on the  WRAL Tar Heel Traveler.

Cloos' Coney Island,  is close by over on Avent Ferry Road in the Mission Valley Shopping Center near the NC State campus.  Today friend Marcia and I decided to check out the place for lunch. Although this place offers a variety of sandwiches and great cheese fries, they are known primarily for their all beef hot dogs.  And this is what we chose.  The "dogs" are spectacular.  When you bite into the skin,  it "pops".  I understand they fly these hot dogs in from Detroit.  This is without a doubt one of the best "dogs" I ever ate.

Great service from these guys.  Thanks very much.

I think maybe I won't have to wait for the State Fair to enjoy my annual hot dog.  I've found a new place.

Shrimp 'n Grits Throwdown at the Carolina Inn

On Saturday, the Carolina Inn in Chapel Hill sponsored a Shrimp 'n Grits Throwdown.  Dan and I like Shrimp 'n Grits, and we like the Carolina Inn, but unfortunately I was home recuperating from eye surgery and missed this.  But I'm sharing some photos by Bridget Whelan from WRAL.  So let's vicariously enjoy this.

The event enjoyed by 200 patrons of the Carolina Inn was a sold-out fund raiser for TABLE, a local charity benefiting children who are at-risk for hunger.

Seven local chefs prepared shrimp and grits, and the judges chose Trey Cleveland from Top of the Hill in Chapel Hill as the winner with his dish: a crisp fried grit cake topped with shrimp and a creamy mushroom sauce.

Attendees voted for their favorite and chose the dish of Vimala Rajendran  of Vimala's Curry Blossom Cafe: spicy shrimp, full of Indian curry flavors.
