A Party for the Broughton Caps Boys' Basketball Team


The Boys' Basketball Team at Broughton High School made quite a run this year going all the way to the Dean Dome to play in the 4A High School State Championship.  They played a terrific game there---very close---and although Olympic of Charlotte won (56 to 53), these boys will always be champions to me.   To quote Michael Jordan, "They didn't lose they just ran out of time."


The parents gave the boys and coaches an end of season party last night and here are some of the photos.

Hypocrite Pie (Dried Apple Custard Pie)

I was surveying my pantry this morning to see what I could make for dessert with something I had on hand and saw the package of dried apples that I had purchased at the Farmer's Market in the fall.

These reminded me of the apple pie that my grandmother made from dried apples and not having the recipe I googled until I found one.
This combination of apples and custard seems to be called a Hypocrite Pie because the custard on top is supposed to conceal the apples underneath.  I never heard Grandma refer to it as a Hypocrite.

Grandma would dry her own apples, putting them in a clean white sheet and spreading them out in a single layer in the sun with cheesecloth (or maybe it was screen wire) over them to keep insects out.  Each night they would be brought in before the dew settled in and put out the next morning to shrivel in the sun as soon as the dew had disappeared.  She often made fried pies with these dried apples, but my favorite was when she made the apple custard type pie.

I won't take the time to dry apples in the way Grandma did, but I should dig out the dehyrator that Dan gave me years ago and try drying some that way. Anyway I did try making the Hypocrite Pie.

Cook until soft and ten mash or puree.



Apples spread in the bottom of the crust.

Add custard on top and place in oven.
The finished pie.
Ready to eat.


This pie is good, but it's not like Grandma's.  I think she must have mixed the mashed apples with the custard because I don't remember there being a custard layer on top.  I'm going to try that next time.  If there is anyone out there with an old-timey recipe for dried apple pie, I would love to have it.

Charlotte Olympic 56, Raleigh Broughton 53


Congratulations to Olympic.* 
The 4A High School Boys' Basketball Championship game was played in the Dean Dome on Saturday night  March 16, 2013.  It was a very close game and although Broughton from Raleigh lost we are very proud of our CAPS.  They played a tremendous game against an excellent team from Olympic in Charlotte.

 This Broughton Team will always be champions in my eyes.  To quote Michael Jordan, "You didn't lose the game, you just ran out of time!"  I love these guys, especially my grandson Zach.

A Morning Visit to the Dean Dome

 
It was such a beautiful morning I decided to drive over to Chapel Hill and get some photos of the Dean Dome on the University of North Carolina campus---the home of the UNC Tarheels.. Actually I wanted to "case the joint" to see where the Broughton fans will be sitting on Saturday night when the Broughton High School boys play Olympic for the 4A NCHSAA State Championship.  I want to be sure that I get behind the Broughton bench as I have for the last four years that Zach has been on the team. 

It was special being in the Dean Dome with no other person around.  I could soak in the beauty of the arena without the distraction of a crowd,  and it is beautiful.

I was a college sophomore in 1957, and I remember watching on TV that Championship game.
Six national championships.  I didn't realize there was one in 1924.





The campus was deserted because of Spring Break.  When I was teaching in college I found it too quiet and a bit sad when students were away on Spring and Fall Breaks.  It's just not the same without the chatter of students around campus.

I am so excited and look forward to the game on Saturday night.  Win or lose it will be a special adventure for the team and for me.

Sweet Sesame Mahi Mahi


Sweet Sesame Mahi Mahi.

When Patrick comes over to cook he likes to try different cuisines.  This past week it was Hawaiian with lovely pan-fried mahi mahi filets garnished with a pineapple salsa.  So tasty.

Sweet Sesame Mahi Mahi
Ingredients:


2 cups pineapple chunks 
1/4 cup fresh cilantro, chopped 
1 tablespoon minced red onion  
2 tablespoons lime juice 
4 (8 ounce) mahi mahi fillets
2 teaspoons sesame oil  
1/4 cup white sesame seeds  
1 tablespoon vegetable oil (Patrick used Canola oil.)

Directions

1. Toss the pineapple, cilantro, red onion, and lime juice together in a bowl until evenly 
mixed; set aside. 
2. Rub the mahi mahi fillets with the sesame oil to lightly coat. 
3. Sprinkle the sesame seeds evenly over one side of each fillets; gently press the seeds into the fish to assure they stick. 
4. Heat the vegetable oil in a large non-stick skillet over medium heat. 
5. Lay the fillets with the seeded side down into the hot oil; cook for 4 minutes, turn, and continue cooking until the flesh turns opaque and flakes easily with a fork, another 3 to 5 minutes. Serve with the pineapple mixture.  The recipe makes 4 eight-ounce fillets.

Ready to enjoy.
Extra servings ready to freeze.
Ready for the freezer to enjoy another day.



Dan is very fond of mahi mahi, and he was pleasantly surprised to arrive home with this dinner awaiting him.

An Evening With Johnny Mathis


Last night I went with friend Helen to a Johnny Mathis concert.  I could close my eyes and  believe I was a teenager again.  Mathis had some of his biggest hits in the 50s when I was in college, and he was and is a favorite of mine.  If you live near where he is performing on his 2013 tour, don't miss it.  Helen and I may head out to Branson (where we have never been) to catch him there in November.

He still has an amazing voice, and he still brings the crowd to its feet just as he did in the 50s.*  Thank you Mr. Mathis, it was wonderful, wonderful. oh, so wonderful to me.

* We are a little slower getting to our feet now that we are a bit older---we can't jump to our feet the way we did in the 50s.

Broughton in the Final Four

In the first game of the 4A High School Boys' Basketball Regionals in Fayetteville on Tuesday night the Broughton team beat Hillside 65 to 49. Here are some pics of the game.

Another good game for Broughton.  They've made the Final Four. The game to determine Eastern NC Champions will be played on Saturday in Fayetteville.
